How I fuel for the morning

Breakfast is the most important meal of the day. I like to power up the day with a creamy fruit and nuts Bircher muesli. Here's my recipe:

My version of Bircher Muesli is great for keeping the stomach calm the morning after chemotherapy but it really is just delicious for any day of the week!
Power Up Bircher Muesli
Ingredients
2 handfuls of organic steel cut porridge oats
1 organic apple
small handful of almonds
5 hazelnuts
3 tbs full fat organic plain yogurt
1/2 tsp cinnamon
Handful of blueberries
Instructions
Whizz the oats in a blender and set aside.
Slice the apple and blend in the blender
Blend the nuts into the apple
Empty into a bowl and add the oats, cinnamon and mix in the yoghurt until well mixed, add more yoghurt if needs be.
Wash the blueberries and place on top of the mix.
Eat and enjoy!
Clare's Tips
You can do this the night before breakfast and leave in the fridge for a more relaxing morning.
If you are really low in energy add a few chopped dates on top
If you are having trouble with sleep add a kiwi when blending the apple
During chemotherapy add a probiotic - open up a capsule and mix into the yogurt for even more gut vitality
